Authentic Tacos al Pastor are a North Mexican pork dish cooked on a vertical spit, like a Turkish Doner kebap or a Greek Gyros. Pork meat is coated in a spice mix and allowed to marinate for one or two days. When it is placed on the vertical rotisserie a pineapple is spiked on top of the spit so that the juices will both flavour and tenderise the meat.
My version combines the same flavours but instead of cooking on a rotisserie the pork is first slow roasted in the oven before being given a blast of high heat at the end to crisp up the outside a little.
