Puerco Pibil is a Mexican classic - it's an incredibly tender pork dish that is marinated in citrus juices and Achiote paste. Although some recipes call for habanero chiles I chose to leave them out as my wife's chile heat tolerance is not that high. Instead, I added a generous shot of habanero sauce to my portion when I served it.
